Apple Cinnamon cupcakes

Hello there,

I hope you’re having a good weekend so far, I know that I said I would upload every single day till Christmas but I couldn’t because I went away for the weekend and where I was staying didn’t have internet so it made it really difficult for me to upload. Even now, I don’t have Internet and I have to use hotspot from my phone to upload this post because I didn’t want to wait till later tonight to upload this.

I want to have this up on the weekend so you can try this out if you want to. I don’t know about you but I love baking, it’s like my time to relax. And because it’s the holiday season, I’m sure the scent of cinnamon and apple can be very familiar during this time of the year. I have been burning the scented apple and cinnamon Yankee candle, I felt it is such perfect combination so why not put them in a cupcakes.

Things that you will need are:

Batter

150g of butter

130g of sugar

220g of self-raising flour

100ml of milk

2 eggs

1 tsp of vanilla extract

1 tsp of cinnamon

pinch of nutmeg

 

Apple crumble

4 apples

1 tbsp of brown sugar

 

Icing

150g of soften butter

300g of icing sugar

1 tbsp of hot water

dash of milk

Preheat oven at 175oC

 

For the batter

1.     Put sugar and butter in a mixing bowl, mix it up until creamy.

2.     Add in 2 eggs, one at a time and vanilla extract, mix well.

3.     Add in flour and milk, divided into patch so you don’t over mix them.

4.     Finish off by mixing in the cinnamon and nutmeg into the batter, you can mix the spices into the flour before the 3rd step if you want to.

5.     Prep muffin tin with cupcakes cup, put batter, and fill 2/3 of the cup.

6.     Put them in oven and bake for about 15-20 minutes or until golden.

Apple crumble

While cupcakes are being baked, peel off skin and chop apples into cubes, then put in saucepan with brown to cook at medium heat until soften.

Icing

For a simple buttercream icing, simply whip up soften butter till smooth then add in icing sugar slowly at low speed to avoid icing going everywhere, then hot water and milk. Whip until icing is smooth, it took me about 15 mins.

To decorate

  1. Using knife or a specialise cutter to create a hole in the middle to fill in with apple crumble, which you will be cover when you add in the icing later on.
  2. Put icing in a piping bag with a tip of your choice, I used the Wilton 2D tip here. I only go with 2 swirls as I didn’t want it to be too sweet, make sure that you cover up the apple crumble in the middle.

* I also cut some apple slices, cutting in a shape that is almost like a pizza slice to stick on top of the icing. This step is totally up to you, you don’t have to do it if you don’t want to.

This recipe is simple and perfect to whip up for a weekend trip, especially when you have guests over.
